Happy Saturday sweet friends ~

What a whirlwind we've been in over here!! We're all still trying to get everything situated. The biggest challenge is trying to find places for things, but it's happening slowly but surely. On top of all the commotion I've ended up with a beautiful head cold...which I normally seem to escape but not this time! Don't be shocked, but Friday night I was in the bed at 9:00 pm and you KNOW that's just unheard of.....

I found these old clippings the other night and have been meaning to share them with you. A couple of them are from old Victoria magazines which you all know that I love ~ it's amazing to me how timeless those old issues are. Don't you love the greenery tucked into the chandeliers?? And the white Christmas photographs are so serene. Maybe you can get some bit of inspiration from these ideas ~

I'm sorry if I've not been able to visit you lately but things should settle down a bit now. We are about to head to the grocery store........oh dear, now we must feed everyone!!!


I would LOVE for you to share with me any wonderful tried and true recipes that you may have, with simple ingredients that I could make for this crowd. Low cost but GREAT taste is what I'm looking for....plus everyone else would be able to try them as well!

Dawn - this may be too simple and boring to some - especially the all scratch recipe people -- for a quick delish Chicken Pot pie - I use two cans of veg- also two of -
cream of chicken soup - ( i microwave several potatoes - then the skins come off quickly -just scoop and put in in random pieces -- The one thing i have to have is good chicken so I boil several boneless chicken strips from -Tyson pack til done - then cut up and mix - all - add LAwry's season salt to
taste -- ( you can add other veggies -if you wish- If it gets too thick with veggies -- add slight bits of the water from chicken - broth will add extra flavor -
mix well - and then I top it after it has heated in the oven
with -- THE French's onion ring things in a can - sometimes i mix a little in the dish before also -- too much onion -give indigestion
to me - but love real onion -- Bake slightly till brown -- very quick - yummy and filling -- HUb loves cranberry sauce with it --
if not in the pantry - i do pears or pear salad -- seems to fit just right - Hope this helps - will have to put my thinking cap on -
I am an old style southern cook -
but with age and waistlines - have changed from all the gravy and grease ( YUM ) oh p.s. - sometimes the ritz crackers crushed ,butter and poppy seed topping can be used - OF course you can always sub the low fat - soup ,low fat butter sub with ritz crackers Kathy - ga

VEG _ALL - a brand of vegetables _ has diced potatoes -beans ,corn ,carrots

Oh Dawn dear,you have soo much to do now, i know you must be very tired with a cold on top , but i can feel how happy you are too, and i wish you such a happy december with your family in the house,-- and then you take the time, to give all of us inspiration too-you are such a beautifull woman.Thankyou, for the Victoria pictures, i love them too, and have several years of old numbers on my shelves.

One my boys' favorites is so simple and delicious served with rice. For each pound of beef stew, use 1 small can of cream of mushroom soup, pepper and I might add a sprinkle of basil. Just stir ingredients together in the crock pot and cook all day. (Actually I end up with about 4 lbs of meat and one family size can of soup)
My guys always enjoy and it is so simple.

Dawn,
I love those pictures from the Victoria magazine. Just about anything cream or white suits me just fine.
As far as recipes, sorry, no help from here. I don't cook any more than i have to, and when i do it's a roast, or tacos or something we can eat for several days so I don't have to cook again too soon.
=0)
Of course that is easier for me since it is just the two of u.

Cheesy Spaghetti Casserole
INGREDIENTS

2 T. butter
1 c. chopped onion
1 c. chopped green bell pepper
2 lb. ground beef, browned and drained
1 (28 oz) can diced tomatoes
2 (10 oz) cans diced tomatoes with green chilies
2 (4 oz) jars sliced mushrooms, drained
2 (2.25 oz) cans sliced black olives, drained
1 T. dried oregano
½ t. garlic salt
1 (10 oz) pkg. thin spaghetti, cooked
2 c. grated Cheddar cheese
2 (10.75 oz) cans cream of mushroom soup
½ c. water
½ c. grated Parmesan cheese

INSTRUCTIONS
Preheat oven to 350 degrees.
Grease a 13x9x2 baking dish; set aside.

In a Dutch oven, melt butter over medium heat.
Add onion and green bell pepper and cook 5-6 minutes or until tender.
Add ground beef, tomatoes, mushrooms, olives, oregano, and garlic salt.
Bring to a simmer and cook 10 minutes.

Layer half of pasta evenly over bottom of prepared dish.
Spoon half of beef mixture over top of pasta.
Sprinkle with 1 c. cheddar cheese.
Repeat layers.

In small bowl, combine soup and water, mixing until smooth.
Pour soup mixture over top of cheese.
Top with Parmesan cheese.
Bake for 35-40 minutes or until hot and bubbly.

Here's something you can throw on the grill or in the broiler...we requested this as kids every year for our birthdays: Crush 1-2 cloves of garlic and mix with 1 tsp salt, add 3 Tbs soy sauce, 1 Tbs tomato paste, 1 Tbs vegetable oil, 1/2 tsp pepper and 1/2 tsp oregano. Score both sides of a tri-tip or any kind of a round roast. Spread sauce on both sides of meat and let sit for at least 4 hours (overnight is better). Broil 10-15 minutes on each side.

This is a tried and true muffin recipe. It makes about 3/4 of a gallon jar full of batter and keeps very well in refrigerator for those times when you need muffins in the morning with your coffee or tea.
