The beauty of sepia ~

I've decided to try blogging in the morning
as I'm wanting to take much better care of myself
and go to bed at a decent time!!
I've heard and read that proper rest
is so very important to our health too.
It will be hard as I'm a TRUE night owl
but I'm giving it a go ~

I wanted to share a recipe that I made the other night
from the new winter 2010
Weight Watchers 5 ingredient/15 minutes cookbook:

you can find it at most grocery stores
right now but they sell out fast ~)




Cumin-Spiced Chicken with Chunky Tomato Sauce ~
POINTS value: 5

PREP: 2 minutes COOK: 15 minutes

Serve this savory chicken over 1/2 cup cooked brown rice
seasoned with turmeric for a hearty weeknight dinner
with a total poings value of 7.


Cooking spray
4 6-ounce skinless, boneless chicken breast halves
3/4 teaspoon ground cumin, divided
1/4 teaspoon salt
1 10 ounce can mild diced tomatoes and green chiles, undrained
3/4 cup (3 ounces) preshredded reduced fat 4-cheese Mexican blend cheese
2 tablespoons chopped fresh green onions

1. Preheat broiler

2. Heat a large ovenproof skillet over medium-high heat. Coat pan with cooking spray. Sprinkle both sides of chicken evenly with 1/2 teaspoon of cumin and salt; cook 6 minutes on each side or until done, Remove chicken from the pan; keep warm.

3. Add 1/4 teaspoon cumin and tomatoes to pan; cook 1 minute. Return chicken to pan; spoon mixture evenly over chicken. Sprinkle evenly with cheese; broil 2 minutes or until cheese melts. Top with green onions.

YIELD: 4 servings (serving size: 1 chicken breast half and about 1/4 cup tomato sauce).

We all loved it!!! I didn't serve the rice but served it with a salad and steamed broccoli ~ I hope you'll get a chance to try it. I love fast and easy!!
